Fix production auth bugs: swallowed error message, dev hint leak

CompleteProfileScreen threw a raw PostgrestError (not an Error instance),
so `err instanceof Error` was false and the real message got swallowed.
LoginScreen's Mailpit hint was showing in production; gated behind DEV.
